Abstract

The requirements for the quality of corn as feed are regulated by the Indonesian National Standardization Agency, so it is important to maintain the stability of corn quality. This study aimed to evaluate the starch and crude fat content of shelled corn with different moisture content and supplemented with mold inhibitors. This research has been carried out in two stages. Phase I (2021): quality shelled corn starch with moisture content <12% and supplemented with mold inhibitors. Phase II (2022): quality of shelled corn crude fat with a moisture content of 13-15% and supplemented with mold inhibitors. The amount of yellow shelled corn used in Years I and II was 750 kg. The synthetic fungus inhibitor used was 0.045% and this antifungal contained propionic acid, lead and arsenic. These two studies were designed using a factorial completely randomized design with a 3 x 2 factorial pattern. The first main factor  was the moisture level (ML) of corn and the second main factor was the mold inhibitor (MI). The results of statistical analysis showed that  ML, Mi and the interaction between ML and MI had no significant effect (P>0.05) on the starch content of shelled corn stored for 90 days. The results showed that ML had a very significant effect (P<0.01) on the crude fat content (CF) of corn, however, MI and the interaction of ML x MI had no significant effect (P>0.05) on the starch content of stored shelled corn for 60 days. In conclusion, the use of mold inhibitors did not affect the starch and fat content of shelled corn during storage. However, there was a numericallydecreased in the starch and crude fat content of shelled corn stored without mold inhibitors. Thus, the use of fungal inhibitors should be used to maintain the chemical quality of corn.
